ingredient detail & prep

  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1/4 cup oil
  • 3 tablespoons water
  • 1 really ripe banana, mashed
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 teaspoons cinnamon
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 1/4 cups oats
  • 1/3 c chopped dried cherries (or other dried fruit or chocolate chips)
  • 1/2 c shredded coconut
  • 1/3 c chopped walnuts (optional)

Preheat oven to 350 degrees F. Mix the vegan sugars, oil, and water.  Add the banana and vanilla. Separately, mix flour, baking soda, cinnamon, and salt.

Mix flour mixture and wet mixture. Stir in the oats, cherries, and walnuts.  If it is too thin, let stand a bit so the oats can absorb the excess liquid.  If too thick, add more water.

Using about two tablespoons of dough, form into a flattened circle, then gently press one side of the dough into a plate of shredded coconut and place them coconut side up on a cookie sheet, and bake for 13–14 minutes.  To check if they are done, flip one over and it should be browned. Check inside doneness.
