Toasted Coconut Cherry Oatmeal Cookies

  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1/4 cup oil
  • 3 table­spoons water
  • 1 really ripe banana, mashed
  • 1 1/2 tea­spoons vanilla extract
  • 1 1/2 tea­spoons cinnamon
  • 1 1/2 cups flour
  • 1 tea­spoon bak­ing soda
  • 1/2 tea­spoon salt
  • 2 1/4 cups oats
  • 1/3 c chopped dried cher­ries (or other dried fruit or choco­late chips)
  • 1/2 c shred­ded coconut
  • 1/3 c chopped wal­nuts (optional)

Direc­tions

Pre­heat oven to 350 degrees F. Mix the vegan sug­ars, oil, and water.  Add the banana and vanilla. Sep­a­rately, mix flour, bak­ing soda, cin­na­mon, and salt.

Mix flour mix­ture and wet mix­ture. Stir in the oats, cher­ries, and wal­nuts.  If it is too thin, let stand a bit so the oats can absorb the excess liq­uid.  If too thick, add more water.

Using about two table­spoons of dough, form into a flat­tened cir­cle, then gen­tly press one side of the dough into a plate of shred­ded coconut and place them coconut side up on a cookie sheet, and bake for 13–14 min­utes.  To check if they are done, flip one over and it should be browned. Check inside doneness.
